Sprouted Mung Bean Misal

Ingredients
2 cups cooked sprouted mung beans
1 cup diced red onion
1 clove garlic chopped fine
1 medium sized tomato
2 cups water
1 heaped tsp of Madras curry powder
O1 tbsp oil of your choice
Salt to taste
To sprout mung bean
Soak mung bean in warm water overnight. Drain the water almost completely, transfer to a clear glass container like mason jar. Cover it with cheese cloth or something that will let some air flow. Leave it to sprout. It should take another 12 to 24 hours depending on the ambient temperature
To make missal
Add oil to a pan. Add the diced ¾ cup of onions and fry them till they are translucent.
Add tomatoes, salt and the madras curry powder.
Give it a couple of stirs. Cover and let it cook for 3 to 4 minutes or until the tomatoes get cooked.
Add the cooked sprouted mung and water.
Boil for 3 minutes
Add ¼ cup of raw onions.
Cook for an additional 2 minutes
Garnish with coriander if you like
Goes well with bread or just on its own
