Vegan Kashi Halwa (winter melon)

Kashi Halwa is a dessert traditionally made with lots of ghee. I wanted to try making it vegan. My daughter is a vegan, she has a sweet tooth and I wanted to try out a recipe that I can share with her. Winter melon is now in season. This is a very simple no hassle recipe.

Ingredients

 

1 cup grated winter melon 

1 cup powdered almonds or almond flour

1/2 cup sugar

1/4 tsp of turmeric tea mix or powdered cardamom

pinch of salt

2 tbsp water if the melon has low water content

 

Method

In a heavy bottom pan add the grated winter melon and pinch of salt. 

Cook it on slow flame for 10 to 15 minutes. If there isnt enough water please add a little and continue to cook.

Add powdered almonds or almond flour, sugar and continue to cook until the water has been completely absorbed. At this point you can add ghee or butter if you like, a tablespoon at a time until you have it separating from the winter melon.

Add powdered cardamom or turmeric tea mix

Serve with vegan vanilla icecream or on it own garnished with cashew nuts or rose petals.
