Wangi Bhath

Here is a simple way to make wangi bhath (eggplant rice). Although the spice mix is traditionally used to make rice with eggplant, other vegetables such as bell peppers, carrots, peas could be used instead to make this delicious rice dish.
If you have the Sitar Spices Wangi bhath powder spice mix on hand, it is much easier to prepare this dish
Ingredients:
2 cups cooked basmati rice
1 cup cut vegetables of your choice
2 tbsp oil
2 tsp SItar spices wangi bhath powder
salt to taste
10 cashew nuts (optional)
Cilantro for garnishing (optional)
Method
Heat oil in a heavy bottomed pan or wok. Add the cashew nuts to the oil. Once they turn golden brown take them out of the oil and keep them aside. Leave the oil in the pan. Add vegetables, saute for 2 minutes, add salt and Wangi bhath powder. Cover and let it cook. Once the vegetables are cooked, add the cooked rice. Mix well. Taste it and add salt and spice levels to your taste levels. Let it heat through for a couple of minutes. Add the toasted cashew nuts to the rice. It is ready to serve.
